Ingredients

  • 1 Egg White
  • 1 tbsp Water
  • 1/2 tsp Cinnamon
  • 1/2 tsp Vanilla extract
  • 3/4 cup granulated sugar substitute I use Whole Earth brand which is a combination of erythritol and monk fruit
  • 12 oz Raw pecans

Instructions

  • Preheat oven to 325 degrees.
  • Line 2 baking sheets with silicone mats.
  • Place an egg white in a medium size bowl.
  • Add 1 tbsp water to the egg white and whisk until frothy.
  • Add the cinnamon, vanilla extract and granulated sugar substitute.
  • Stir and mix until thoroughly combined.
  • Add the pecans and stir again until the pecans are thoroughly coated with the sugar mixture.
  • Spread the coated nuts on the prepared baking sheets in a single layer. Take your time here to spread all the nuts out so they do not stick together.
  • Cook the pecans in the preheated oven for approximately 20 minutes. Watch them carefully since oven temperatures vary and the fact that nuts burn easily.
  • Let cool on the pans for 15 minutes. The nuts need to be cool enough to handle so you don't burn your fingers!
  • Remove the nuts from the pans while breaking apart any that are stuck together.
