Preheat oven to 325 degrees.
Line 2 baking sheets with silicone mats.
Place an egg white in a medium size bowl.
Add 1 tbsp water to the egg white and whisk until frothy.
Add the cinnamon, vanilla extract and granulated sugar substitute.
Stir and mix until thoroughly combined.
Add the pecans and stir again until the pecans are thoroughly coated with the sugar mixture.
Spread the coated nuts on the prepared baking sheets in a single layer. Take your time here to spread all the nuts out so they do not stick together.
Cook the pecans in the preheated oven for approximately 20 minutes. Watch them carefully since oven temperatures vary and the fact that nuts burn easily.
Let cool on the pans for 15 minutes. The nuts need to be cool enough to handle so you don't burn your fingers!
Remove the nuts from the pans while breaking apart any that are stuck together.
