Easy Homemade Blender Mayonnaise

Searching for mayonnaise that isn’t full of nasty, unpronounceable ingredients? Trying to avoid soybean oil? Want a great tasting mayonnaise? Well if the answer to any of these question is yes, good luck finding one on your grocery store shelf.

After wasting countless dollars on inferior “healthy” mayonnaise, I broke down and finally tried making my own.

I use a Vitamix blender. Any blender that you can control the speed should work. If you don’t own a blender, you can also use a stick, immersion blender. I haven’t used this method but click here for instructions to do so.

Shockingly, I discovered that it isn’t that hard to make. The tricky part is tweaking it to your own taste.

Everyone has a particular brand of mayonnaise that is their favorite so it would be impossible for one single recipe to satisfy everyone.

In my house, we do not care for the taste of avocado oil mayonnaise. And taste is paramount! If it doesn’t taste good, why would you eat it. We also prefer mayonnaise that is less tart. To accomplish this, I use a combination of vinegar and lemon juice.

Think of this recipe as a template for your own brand of mayonnaise.

Easy Blender Mayonnaise

Creamy, delicious mayonnaise made in minutes in your blender.

Equipment

  • 1 blender

Ingredients
  

  • 1 large egg
  • 1 tbsp white vinegar
  • 1 tbsp lemon juice
  • 1/2 tsp dry mustard
  • 2 pinches sweet paprika
  • 3/4 tsp Kosher salt If not using Kosher salt, start with 1/4-1/2 tsp fine sea salt,
  • 1 pinch white or black pepper
  • 1 cup oil of your choice

Instructions
 

  • Crack the egg and add to the blender container.
  • Turn the blender on at the lowest setting.
  • With the blender running, add the vinegar, lemon juice, and seasonings.
  • SLOWLY drizzle in the oil while the blender continues to run. As the mayonnaise starts to thicken, increase the speed of the blender until it has reached the desired thickness.

Notes

Instead of distilled white vinegar you can use apple cider vinegar.
If you like mayonnaise on the tart side, you can replace the lemon juice with additional vinegar.
Don’t like mustard or paprika? Leave them out. 
I use white pepper when I have it. Black pepper is delicious in the mayo but it does produce a final product with black specks in it. If that bothers you, use white pepper or omit the pepper.
Experiment with different oils, vinegars and seasonings to create your own masterpiece!
